Tonight I am conducting lactobacillus experiments in my kitchen.

I have always been curious about quark and what it tastes like.  So I went to the Edelweiss Deli and popped $6 for a quart of it to both taste it and use the culture for the experimentation from the Wecker cookbook.  To describe the taste it is halfway between creme fraiche and sour ( Read more... )

I'm currently at about recipe 280 and have 10 pages left in section 2.  I'd better get caught up with the indexing!  I think the goal will be to finish part 2 by the end of March and spend April expanding my spread sheet by ingredients and the equipment mentioned in the individual recipes.  And work on some translations from these first 2 sections ( Read more... )
